Our Artisan Salamette is made up of ground heritage pork belly, shoulder, jowl, and leg is blended with Primitivo red wine, fragrant aromatic spices, garlic sea salt, and ground tellicherry black pepper. It is encased in a natural casing, fermented, and hung to dry for 45 days.
