Round Roast

At its tastiest served rare to medium rare, pull it out of the oven at 130 to 135 degrees. After roasting, rest the meat covered for 15 minutes to allow the juices to redistribute throughout. The meat is still cooking as it rests. Use the meat drippings to make homemade gravy!
