A Tuscan (a region in central Italy) original, our Finocchiona is traditionally made using equal parts of lean pork meat from the shoulder and firm fat from the belly and jowl. Coarse ground and seasoned with Chianti, garlic, fennel pollen, toasted wild fennel seeds, sea salt and cracked tellicherry black pepper. It is encased in a natural casing, fermented, and hung to dry for 45 days.
